Fresh Summer Italian Gourmet Pasta

We've been enjoying our recent order from Olive Nation, and have been happy with the imported Italian pasta and artisanal olive oil. It seems that summer is the best time to make fresh, quick pasta dishes with homegrown vegetables!

 

Here's a recipe that I created tonight - it was Very Delicious!

Fresh Summer Pasta

1 pound of imported Italian gourmet pasta (we had the cutest shaped one, called Faraci)

1 pound of Italian sausage

Italian sausage seasoning (I use Penzey's), to taste

Chopped onions and garlic

2 small zucchini, shredded

3 fresh tomatoes, diced

Huge handfuls of basil, oregano, and parsley

A splash of good olive oil

 

 

Brown the fresh sausage and add the Italian sausage seasoning and onions.  When it is done, turn it to low. Cook the pasta. When there is only 1 minute left of cooking time, add the zucchini shreds to the pasta water.

Drain the pasta and zucchini, and then add it to the meat.  Toss to combine. Add the tomatoes and herbs, toss to combine again.  Splash a bit of artisanal olive oil on top.  Serve, with grated Parmesan or Romano, if you so desire.

 

Easy - under 15 minutes. Fresh - the taste of summer!
